Lo simbolo di purezza e rinascita inoltre i suoi buchi per guardare il futuro. Oggi vi presento un piatto semplice che si può mangiare come un contorno.
Questa volta Ho tagliato il bordo in modo che sembrano i fiori questo taglio si chiama “hanarenkon” cioè i fiori di loto
<INGREDIENTI>
- Radice di loto ・・・ 6300g
- Alga kombu・・・ 1 pezzo 5cm x 5cm
- Acqua ・・・250ml
- Aceto ・・・ 150ml
Sale ・・・ 1 cucchiaino - Zucchero ・・・ 75g
Peperoncino ・・・ 1, 2 pezzi
＜PREPARAZIONE＞
1) LASCIATE L`ALGA KOMBU IN UN PENTOLINO CON 250ML DI ACQUA PER 30 MINUTI
2) Se avete il radice di loto fresco Lavate, sbucciate e tagliate il radice di loto 7 mm di spessore e mettere nella ciotola di acqua con un po` di aceto per fermare il colore
3) Scaldate il pentolino di 1) con la fiamma bassa e togliete l`alga kombu prima del`ebollizione e unite l`aceto, lo zucchero, il sale e il peperoncino tagliato e mescolate bene per sciogliere. Trasferite in un contenitore.
4)Cuocete il radice di loto 1-2 minuti e unite nel contenitore e lasciate a riposare una notte( o almeno 3 ore)
Io uso l`aceto di cereali giapponesi (kokumotsusu) o di riso ma potete utilizzare l`aceto che ti piace
